CoD 4 (yeah, I know. Everyone hate me, but I still think it's the strongest CoD and, alone from the rest of the series and what's it become, a quality FPS in terms of story and multiplayer).
Halo 2
KoToR 1-2
Fallout 3
Assassins Creed 2
Star Wars Galaxies (an MMO, to this day, I'm still convinced was the best MMO I've ever played, pre-CU).

I did when they were in the middle of building it, but now I'm not sure where my disc is.

Galaxies was really good and I agree that CoD 4 was the best CoD of the 360 era (or PS3)
