There are a total of 6 game modes (not including Iron Banner) to choose from in Destiny's competitive multiplayer, the Crucible.
Skirmish
The in game description is "Small team tactics. Kill the enemy. Revive teammates."
In this game mode two fireteams consisting of 3 players each fight to the "death." There are no vehicles in this mode. An interesting mechanic in this mode is that teammates can revive other teammates. I'm assuming this will work similarly to how reviving teammates in PvE works.
Rumble
The in game description is "Kill everything. Watch your back."
In this game mode 6 players will fight each other in a total free-for-all; each player playing alone trying to kill all others. There are no vehicles in this mode. There is no reviving as players will not have teammates.
Salvage
The in game description is "Salvage relics. Kill enemy players. Revive teammates.
In this game mode two fireteams consisting of 3 players each race to complete/disrupt and defend/attack objectives. There are no vehicles in this mode. Teammates can revive each other in this mode. For all of you Halo fans, I think this mode is going to be the new king of the hill. So here is how I think this mode is going to work. An objective will appear on the radar and both teams will race to it. The first team to this objective will need to deploy a ghost and then defend the area from the other fireteam. The defending team will probably be earning points for every second the objective is held. There will also probably be a countdown timer. If the defending team can hold the objective through the timer, they will get some kind of bonus (probably points). The attacking fireteam will probably need to kill all defending players in order to take the objective. Once all defending players are killed they will have to deploy their ghost and defend. This is just a guess at how this mode will work; all I know is that it will be very similar to king of the hill from Halo and because of that I am pumped.
Clash
The in game description is "All-out team warfare. Destroy the enemy.
In this game mode two fireteams consisting of 6 players each will fight to the "death." There are no vehicles in this mode. Teammates cannot revive each other in this mode.
Combined Arms
The in game description is "All-out team warfare with vehicles. Destroy the enemy."
In this game mode two fireteams consisting of 6 players each will fight to the "death." There are vehicles in this mode as the description reveals. Teammates cannot revive each other in this mode.
Control
The in game description is "Capture Zones to increase points for every kill."
In this game mode two fireteams consisting of 6 players each will fight to keep control of the 3 stationary zones spread out across the map. Holding zones boosts the points that are earned from kills, so the main objective is still to kill the other team. There are vehicles in this mode (at least there were in the Beta).
Iron Banner
The in game description is "Power matters. Earn epic rewards & gear."
This game mode is a variant of the crucible where unlike standard crucible, players gear/stats are in full effect (in standard crucible all players, despite their level, have the same stats and do the same damage). We do not know at what times the Iron Banner will be available to players (in the Beta it was only available limited periods of time) or what modes it will have.

So I'm guessing there's no way to choose clash in crucible... I dislike the rest of the game modes esp control ... I just wanna destroy my enemy's with out all the hubbub...

I love Destiny but the fact that majority 5 these are death match based and the objective one is only 3v3 is kind of disappointing, nothing wrong with a bit of variety!
