Considering that Sauron is actually a deity older than the universe itself, and he doesn't really have a life force to be drained, the killing curse wouldn't really work on him, and that's all Voldi has going for him.

Voldemort was beaten by a kid with a magic wand! It took a team of 9 elite magical creatures and beings to defeat Sauron and even then it took a very long time.
