Pretty simple really.
Do you allow the stuffing/dressing to be made with the remaining organs left inside the turkey, or are they taboo in your holiday feast?
Personally I find the organs to be cat food (when we had cats) and cringe at the thought of the liver, heart, and gizzard being in the stuffing / dressing. The neck is ok, because it's just meat. No vertebrata of course.

At grandma's......cornbread dressing is made with chicken... Giblets are for "giblet gravy" for the dressing. preferably made with neck and boiled chicken, broth from the boiled chicken, boiled eggs (sliced up), a little of the cooked dressing, salt, pepper. cook until the the desired thickness. Spoon it over the dressing and yum. If prepared properly, it tastes good with any of the organs though. :-D
