How would you haul a horse around in space? Look at it in a logistical sense in the lore and you'll have your answer about animal mounts in Destiny. Hauling an animal around on your ship, cleaning up after it, feeding it, providing it with oxygen on other planets- ain't no Guardian got time fo dat.
