I mean we have identical cases here. Instead it's a christian man, cutting off a person's head in the name of Jesus. Except we arrested him, instead of shooting him dead like we do most to most Radical Muslims. He's the definition of Radical Christian and we write him off as "mentally ill". Why don't we give Radical Muslims due process anymore? Have we gotten so used to calling them terrorists that they're automatically a threat with a political agenda the moment they scream ALLAHU AKBAR (God is great), deemed "enemy combatants" and we now can just deny them all their rights?

Because no form of christianity teaches this. "Radical Christianity" is closer to the Westboro Baptist Church. The only people who clam to follow Jesus and cut peoples heads off are members of cults that have nothing to do with the main church.
