I love anything that is spicy. I eat straight habaneros on a regular basis and I use ghost peppers in a lot of my salsas and I am working on creating different steak and fish recipes. I also ordered some trinidad morugas, I can't wait to try them out. I'll probably record my reaction. Does anybody else out there like spicy food? Do you have any recipes?
Here's a salsa recipe I created.
6 large tomatoes (chopped into chunks)
1 onion (chopped)
1/4 cup of fresh cilantro (chopped)
1 clove of garlic (diced)
1 1/2 teaspoon lemon juice
1 teaspoon black pepper
1 teaspoon vinegar
7 frozen ghost peppers
1/4 cup of water
Leave the ghost peppers in the freezer until you are ready to cut them up.
Dump all the other ingredients(except the cilantro) into a pot. Then take out the ghost peppers and quickly chop them up into fine pieces. I like to use an automatic dicer. They are frozen so that each of the pieces can keep their shape and it makes for a better texture. Add them to the pot. Bring the pot to a boil and immediately turn it on low heat and simmer for 6 to 7 minutes. Stir constantly.
Turn off the burner and add the cilantro to the pot and stir. Then let the pot set until the sauce cools down until it is just warm.
Put the sauce in a blender and blend until it reaches the desired consistency. (I like chunky salsa, so I put mine in for only a few seconds)
