Because the Earth is so big that short section appear to be flat. Do you know what a 'Horizon' is? Say you are looking at the sun setting and you can't see it anymore because it's beneath the horizon. That is the curve of the Earth making it so you cannot see it anymore. The larger a sphere is, the less its... I forget the word... 'incline.'
