Hi there!
Did you trigger the symbol? According to the screenshot you provided, the symbol is still in the area where the knight was defeated. If you do not trigger the symbol, the knight will not respawn.

Redid the encounter, sadly looking thru circle to reveal the symbol does nothing. Thats seems to be the issue too. Got d2checkpoint save on boss and everything works as intended -_-. Thanks for trying tho.
