I don't like the current implementation of fishing

While I do appreciate the general sentiment of adding fishing to the game (what MMO is complete without fishing?), I am quite unsatisfied with it so far.
No sugar coating, it's just boring. I don't find it to be very engaging. I would have really liked to see a mini-game with it. For example, I really like things like lock-picking in Oblivion/ESO or hacking in the Fallout games. In terms of fishing, I really liked Red Dead 2's, Stardew Valley's, etc.
I would just like something, besides just sitting pressing E on my keyboard.
Additionally, I have 2 other gripes with fishing. Firstly, I don't like that you have to pick up fish. It kinda-sorta promotes player engagement, but it's not fulfilling, and rather annoying. I'd much rather have an interesting minigame related to the cast/catch, and it just auto-picking up.
Secondly, I don't have much of an opinion on the mechanics for getting more rare fish, rewarding players for sitting in the activity. However, public events despawning fishing holes, and wiping out progress, is a massive pain point for me. If there were some way for both to co-exist/progress returning when it comes back, it would be greatly appreciated.
