Now that its confirmed that Destiny 2 is being removed from Stadia, what will happen to our expansions? I spent money on buying some expansions on Stadia, so is there any way I can move them to a different platform? I don't want to spend another 100 dollars rebuying expansions just because I can't play on my platform anymore.

You will need to check with Stadia Support for more information and announcements about refunds and what their plans are for ending their service. You can buy the DLCs on a different platform now and will get compensated back by Stadia later, or you can wait until you receive the refund and use that money to buy on a different platform. Bungie has no control over Stadia and learned of the announcement today. It is up to Stadia whether they will provide any kind of transfer of licenses option.

Google has said they'll be refunding DLCs during January. Bungie has only just learned about the Stadia shutdown, so it'll take abit of time to arrange license transfers (if they arrange that with google + another pc platform) or if they'll just leave you to repurchase it with your refund.
