Geralt would "kill" him twice then pin him down after he figured out that he can't be killed.

Chosen Undead.

Even if the Undead died, he would spawn at the nearest bonfire and come back. He also has a wide, [i]wide[/i] variety of tools at his disposal: sorceries, pyromancies, miracles, hexes, all kinds of weapons... not to mention that some of the aforementioned things are stupidly powerful. Wrath of the Gods (DS1), Climax, Affinity (DS2), Soul Stream, Crystal Soulmass, etc.

Chosen undead would win no problem. Kinda hard to kill someone who never dies.
