Hmmm. Difficult to say what I would do with infinite knowledge and power. I just feel triumphant when I make a "B" on a difficult exam, or when I don't burn the eggs in the morning. I think being the very definition and incarnation of infinite would be great for a whole five minutes until I realize there is no challenge. It's like playing a game with a cheat code that gives you everything and basically finished the story for you. Where is the fun? I appreciate my mortality. It provides the challenge of "what can I do to leave a positive mark on history?" Everyday I wake up is a renewal of that challenge. Guess what fate/God? Challenge excepted.
