My father used to make egg sandwiches, a folded piece of buttered toast with generously peppered scrambled eggs in it. He normally adds things like jelly, bacon, grits (that word sounds too southern...), etc. But, like many other sandwiches, I just have the bread, the main thing in the sandwich, and maybe some condiments.
That said I've never actually had any other types, so scrambled is my favorite because it's all I've ever had.
