1) it'd probably be more around 100. A single Jedi took down an entire Stardestroyer. "Size matters not" -Yoda

2) there would be probably around 1 million Jedi and Sith if we were to take every Jedi and Sith who ever lived. And that's not even including the random obscure force users referred to a few times who are more powerful than the Jedi and Sith.

Yes there are still the force sensitive eels who can't be willed by the force to do things.

If the universes were to fight, the first thing that would happen is they sense the power of the Halo rings and use the force to tear them apart.
