Sure you can supplement stuff if you put effort in, but an optimal diet will include animals or their byproducts to some degree.
Not to mention that the [i]average[/i] Vegan isn't necessarily that healthy, certain deficiencies and being underweight are not uncommon. That's not to say it's impossible to be vegan and healthy, merely that it isn't a given.
