By the time you get to 2 & 3 your role as supreme badass is well established and it becomes more your day job rather than a "oh shit son" moment. Each one of the series had its strong point which changed, ME1 - characters, ME2 - story, ME3 - gameplay and set piece encounters.

The second one was the best. It had a good story, best character development/story, and solid gameplay. ME1 tried to do too much, and didn't do anything particularly well, except for its story. The gameplay eventually grows on you, but the game itself lacks so much polish everywhere it just feels cheapened because of it. 3 was good in some ways, bad in others. Gameplay was overall a step up, but the abilities suffered in most cases. Older weapons felt worsened (Viper, Revenant and Tempest are all prime examples). Story was slightly beneath the other two, then escalated randomly (when he got pissed after Thessia), before flopping at the end (which gets better with time).

Mass Effect 1, because it's the only one I played, and only for about 3 seconds, before the controls drove me insane, and I had to stop. :3

3 has the most pivotal moments, the best soundtrack, and the grandest fights. The mechanics were sharper, and the multiplayer was incredibly fun.

Mass Effect 1 - Best Story Mass Effect 2 - Best Introduction to the universe with amazing locations and best character development. Mass Effect 3 - Great conclusion to everything that was established and best moments. [spoiler]They all have something that makes them unique[/spoiler]

Two has the best story but three has better combat, and one was still pretty good.

All three have their own unique problems. Bioware never managed to perfect the formula. ME1 had its problems which were addressed with ME2. Then ME2 created brand new problems. Then ME3 attempted to bring the two together while hampered by the problems created in ME2. Had Bioware not chosen to do what they did with the final mission and ending I'd argue we'd all be saying ME3 was the best. Couple that with how disconnected, boneheaded, and of poor quality the executives at EA are and you get a mess. I really wish Microsoft had carried through with buying Bioware. They'd have handled the IP much better than EA.

I thought the title was "[i]Which was the last ME you've played[/i]". I played and beat the first game a few times and even got that DLC where you go on that moon and have to disable landmines. Shortly after, my ME disc stopped working. Without even thinking of data being transferable to ME2, I deleted all ME saves from the hard drive and discontinued playing the series.
