I have only very recently taken to trying the raids but have since discovered that I can't hear anything on fireteam chat and none of my fireteam can hear me. I appear as muted and they can't unmute me and I can't unmute them either. Switching over to party chat doesn't help, it's the same problem. My NAT is open, I've forwarded all ports and my headset works fine. I recently changed my DNS settings for Netflix as I live in France, could that be messing with my network? Any help would be appreciated because without chat capabilities it's obviously impossible to raid.

If you're in fireteam chat and they're in a party, then you won't be able to hear them, vice versa. That may be the case here as you said so yourself. You're relatively new to raids and therefore new to the communication system in destiny. You may need to join/leave a certain party in order to communicate with them using voice. Message the guardian you're attempting to raid with, asking for a party invite. Hopefully this clears things up.

What console are you using? You could try to hard reset your x1 by holding the button on the console for 10 or so seconds or till it chimes and shuts off. If that doesn't work is your controller up to date? Maybe a console update?
