I still remember fighting Psycho Mantis in Metal Gear Solid 1. He would read all your moves before you did them and was literally impossible to beat. He would also talk to you about the games that you had already played by reading your memory card (this was super trippy). The only way to beat him was to unplug your controller and plug it into port two so he couldn't read you moves anymore. It took me and my buddy days to figure it out... This was before Google too, so you couldn't just look it up.

i would have to say omega himself, it took close to an hour at my level. then there was jormungand in the arena conquest, ***ING JORMUNGAND! my lawn, my lawnmower ahh, dr. nefarious on hard difficulty, not even the best weapon (at its starting level), best armo in the game would make a dent or prevent some of the damage

Tales of Vesperia, final boss Duke Secret 3rd form (have to collect all the Devil/Fell weapons through out the game) Literally harder then you would ever believe, it's a live action JRPG (Japanese roll playing game) if you don't know, the story and character development are amazing and the combat is like a fighting game, very cool. Anyway this guy hits you and he hits hard I might add, and inflicts every single status effect in the game on you or any character he so much as looks at haha

Do MMO bosses count? If so, Absolute Virtue in FFXI. That thing remained undefeated for several years since no one could ever figure out the secrets required to weaken him. Also, after I had quit they shortly after released another ridiculous boss named Pandemonium Warden. I believe a Linkshell (basically a guild) went against it for 48 hours straight rotating players in and out and they ended up giving up.

Rocket Racer from some Lego Racers game in the 1990's. The way they programmed that specific AI was simple: "you will not win." He was that boss that needed the older Brother to beat. 4 year old me had serious trouble with him, but for some reason, after he's beaten, he gets a lot easier in rematches.

I actually have to say some of the lost planet 3 bosses, they involved learning how to dodge the bosses attacks, sometimes fighting off other Akrids at the same time, spotting their weak point, and being able to exploit that weak point. It got tough. Like the king crab boss, you had to use your rig (a utility mech) to to grab its claws and lift it into the air. Get out of the rig, and shoot its stomachs up, it would then knock your rig over and you had to evade its attacks until you could climb back into your rig, easier said than done.
