Against traditional projectile weapons, Jedi fare approximately as well as they do against blaster fire. However, most "Jedi-Hunters" would favor projectiles, since it's much harder to deflect, instead of vaporizing the bullet on contact. Against high-speed rounds, likely most Jedi would simply destroy the bullet with a strike of their saber, while large bullets, being slower, would probably just be dodged. Turbolaser rounds could not be deflected, but that's' due to the nature of the weapon.
