It has been observed in animals with very short lifespans, ring species, fossils, similarities between people and chimpanzees, and a lot more. The main one being that it has been observed.

Everything is evolving, humans don't really need to anymore at the moment because we are very stable, we aren't as effected by the environment because of houses. We have used our inteligence to build so we have settled. Other animals still have to adapt in order to survive.

You see, us humans are not the most advanced organisms this planet could generate. Eventually, our kind will be wiped out, in while though so don't worry lol but It'll be as if we never existed, we'll be remembered as fossils as we will suffer the same fate as the dinosaurs. Earth will then heal, and create even more advanced sentient life. We are just a "rough draft" of the potential of this planet.

Evolving just as fast as any other animal right now... humans haven't been on this planet very long.

Things evolve and adapt based on necessary need to be suitable for their environment. Humans don't need to because we are stable. We are slowly adapting to have more sun resistant skin for example. That just has a minimal change in the phenotype.

They have looked at fruitflies and moved them into different enviroents, after several generations they compared the original group with the most recent, they were different and could not mate with each other making them a new species.
