You wont see an animal evolve into something else, ever, because of the timeframe it takes. Viruses, bacteria, etc, you can see with your own two eyes.

That's one of the points of doing basic experiments in science class. To show that the results, when an experiment is performed correctly and under the same conditions, will always be the same for that particular experiment.
